What did Eru Ilúvatar do before creating the Ainur?

Eru being sort of the "Creator" did what OUR Creator did before he gave the Torah to Moses. NOTHING
At least if you think around those lines. In Genesis it said that "The Spirit of G-D Floated above the Waters" meaning Primordial waters
So maybe Eru also did the same thing. And I could really see Eru singing Solos Bear. Great take on that one.

Is there any given statment for how long the Ainur sang before the creation of Arda? I always imagined it being a very very long time. Perhaps even as long as the ages of Tolkien's tales. I may simply be confused on this matter tho

No Huan, they never gave a time announcement as to how long the songs of creation lasted

Can it be assumed that there were more being like the Ainur that did not come into Arda?

That's sounds like a lot of fun Arwen. No one I know is into Tolkien lore or the LotR books at all for that matter

You know, they are out there, even in your area. Get in touch with the Tolkien Society in the UK, and ask if there are Tolkien Groups near you. I was going to start my own, when I found out that Houston had a Tolkien Group. And if there is none, you can put an ad into your paper in the Community Calendar, which is usually free to find people who are interested in starting such a group.
